Bread Pudding - something that I made years ago and having a surfeit of bread I thought that I’d have another go. A quick look on the web returned several recipes so this is a combination of several of the simplest.

500g bread – any type that takes your fancy

100g butter, spread etc

100g brown sugar (but white will do)

100g currants, mixed fruit etc

2 eggs

500ml milk

vanilla/ginger/spice/caster suger/icing sugar etc optional to taste

Process:

Butter the bread then cut it into small pieces and put into a large bowl (I leave the crusts on). Add the milk and mash it all together into a slurry.  Add the sugar, spice, fruit and beaten eggs to the mixture. Line a shallow tray, cake tin etc with baking parchment and pour all the mixture in. Cook for 60-90 mins at approx 150C, check after 60 mins.

When cooked, you can cover it with caster suger, icing sugar etc if you have a sweet tooth.

Eat!
